The first week of being back on the healthy-eating wagon is over.  I’m not saying it was always easy, but the results sure do make it worth it.  My hubby is down 4 pounds already and I’m down 3.  It just goes to show how badly we’ve been eating.  My hubby continues to marvel that he’s not at all hungry, and he’s losing weight.  More important than actually losing the weight, we both feel so much better.  More energy.  Less bloated.

I’m excited about this week’s menu.

Monday:        Acorn Squash Stuffed with Mushrooms and Rice (going to make cauliflower “rice” for this)

Tuesday:        Chili Lime Chicken with Sauteed Broccolini

Wednesday:  Lemon Cream Shrimp Scampi over Zoodles (I will replace the mascarpone cheese with 1/3 fat cream cheese and omit the bread.  With great sadness.  Sigh.)

Thursday:      California Pizza Kitchen Thai Crunch Salad

Friday:            Date Night!

  • Ceviche for an appetizer with a cocktail
  • Tuna Tartar with a Ginger Lime Aioli

Saturday:       Blue Cheese Stuffed Pork Chops with Pears & Roasted Brussel Sprouts

Sunday:         Smoked Salmon Chowder


Doesn’t sound like “diet food” now, does it?  And I can assure it, it most certainly doesn’t taste like it either.

We both REALLY miss bread, but . . .


So we’ll keep on doing all we can to stay healthy for each other.  Good health is a better reward than bread any day.
