I really do love planning meals and finding healthy options for us.  Since I can’t just sit and watch tv, I usually spend that time planning meals and menus for us for the week.  I’m a big Pinterest user, and I use this as a way of keeping my recipes organized and easily accessible.

I’m excited about this week’s menu.  Or maybe I’m just hungry.


Monday:          Eggplant Rollatini, Caprese Salad

Tuesday:          Turkey Caprese Meatloaf, Sweet Potato FriesBroccolini

Wednesday:    One Pan Lasagna with Ribbon Zucchini Noodles

Thursday;        Chicken Spiedies, Peppers & Onions, Arugula Salad

Friday:              Mongolian Beef & Broccoli over Cauliflower Rice

Saturday:         Chicken Zucchini Fritters, Spinach Salad

Sunday:            Sweet Thai Chili Salmon Skewers, Tomato, Cucumber & Avocado Salad
