I have to say, I’ve been really happy with some of the new recipes I’ve made in the past few months.  It’s really exciting to find things that are so delicious and filling, yet so healthy too.

Whoa!  Where’d that come from?  I NEVER cheat on my clean eating plan (wink, wink).  Everything in moderation, as my grandpa used to say.

You don’t have to eat heavy, fat-laden, unhealthy food just to enjoy eating.  And if you’re like me, and need a LOT of food to feel satisfied, eating clean and healthy allows you to eat more without gaining weight – a win-win in my opinion.  My hubby loves hearing me say, “Go ahead and have more”.  He is always asking me, “Really? I can eat ALL this?”.



So here’s this week’s plan:

Monday:                        Out (because we’re going to be working hard in the gardens today, and then thought we’d try out a friend’s pub)

Tuesday:                        Pesto Zoodles with Roasted Tomatoes and Grilled Chicken

Wednesday:                 Shrimp Fried Cauliflower “Rice” Bowl 

Thursday:                      Sweet Potato, Kale & Sausage Bake

Friday:                           Spaghetti Squash Bolognese  

Saturday:                      Stuffed Pepper Soup 

Sunday:                         Mustard Balsamic Pork Chops with Rosemary and Broccolini
