I love Memorial Day Weekend in that it’s the unofficial kickoff of the Summer. The forecast for the rest of this weekend is supposed to be near 90-degree temperatures and lots of sun. I love it. This is my happy place. 

And being that it’s Friday, that can only mean one thing: it’s unofficially the first Date Night of Summer. ❤️

Tonight I tried some of the clean-eating appetizer recipes I’ve been saving for hot Summer nights: Buffalo Chicken stuffed celery, spinach stuffed mushrooms and spicy shrimp salsa. And we washed them all down with my hubby’s awesome Ruby Red Cosmo’s. It was a perfect combination  – flavorful and satisfying, yet still light and “clean”. 

Apparently, even the fairies are having a party tonight. They have a little campfire going.  I think they’re quite happy in their new home. 

What a treat to have such a beautiful hot night – in May, no less – to kick off a great first Date Night of Summer. We’re being serenaded not only by Michael Buble, Frank Sinatra and Dean Martin, but by many chirping toads around the pond. 

Have I mentioned just how much I adore this amazing guy?

Here’s to a long, hot Summer full of many more Date Nights. . . And just maybe we can make up for all those we missed last year. ❤️
