Yesterday my hubby and I made it our goal to eat every last junk food item we wanted to.  No limits.  And let me tell you, we did a really good job gorging ourselves.  Ugh.

This is going to be a tough week for us.  There is still so much candy, icecream, cookies, etc. lurking in corners of my kitchen.  But we’re back on the healthy-eating wagon.  I spent all day yesterday gathering recipes and making eating plans for the week, admittedly while brushing cookie crumbs off my notes.

Since I get many requests for meal ideas, and especially for healthy meal ideas, I’ll share my weekly menu.

Monday:  Roasted Chicken (Ina’s recipe!), Mashed Cauliflower, Roasted Asparagus

Tuesday: Pork Tenderloin Salad (leftover pork from Saturday on top of some mixed greens, sliced pears, toasted pecans, a little bit of crumbled blue cheese, and a fig balsamic vinaigrette)

Wednesday:  Skinnytaste Spaghetti Squash Sausage Lasagna Boats (you gotta check out Skinnytaste for lots of great healthy recipes)

Thursday: Chicken Salad    This is a regular staple meal in our house: spinach, sliced chicken breast, craisins, feta cheese and pomegranate vinaigrette.

Friday: Date Night (tbd)

Saturday:  PF Chang Copycat Lettuce Wraps

Sunday:   White Chicken Chili

So the plan is in place.  The groceries have been ordered.  Now to execute . . . . and to ignore that good fresh Italian bread calling my name.
