My birthday totally sabotaged my clean eating plan.   Although I thoroughly enjoyed every single (and there were a lot of them) fattening item that entered my mouth, this morning’s reading of the scale was all the proof I needed that I had overindulged.

So back on the wagon today with my clean eating.  NO CHEATING ALLOWED.

My breakfast was my green smoothie, which tastes so much better than it looks.  I made this one with lite almond milk, 1/2 a frozen banana, 2 handfuls of baby spinach, a tablespoon of flax, and 1 cup of frozen dark cherries.

I’m not lying, it really does taste better than it looks.  Thank goodness.

So this week’s menu will be super healthy, super clean, and super tasty.  Well, super healthy and clean except for Valentine’s Day which we will celebrate on Saturday. (I can’t divulge the details at this time because it’s going to be a surprise for my hubby, and he happens to subscribe to my blog <3 )

I made up my menu for this week in the car on the way home, right after eating a huge everything bagel with cream cheese and lox in NYC before we left, so the feeling of gluttony was the main motivator of this menu.

Monday:       Chopped Salad

Tuesday:       Mediterranean Chicken

Wednesday:  Chicken Sausage & Onions

Thursday:      Dinner at friends (and I sure hope they’re doing something healthy because they binged with us this past weekend!) 🙂

Friday:           Chicken Zoodle Caprese

Saturday:       <3 VALENTINES DAY <3

Sunday:          Creamy Chicken Tortilla Soup

If you mean a spiralizer, I do. 🙂 I have a simple little cheapy one that looks like an old-fashioned pencil sharpener that works great. I use it for carrots, zucchini and turnips. I don’t like having a lot of kitchen gizzies that take up room, so this one does the trick for me.

I just bought some frozen, dark cherries, so I will try this in my smoothie tomorrow morning! So glad you had a great time in NYC. What I wouldn’t give for a bagel w/lox again!

Do you have any other variations to your green smoothie? And do you buy the fruit already frozen or freeze it yourself? How much light almond milk do you put in?

It’s always 1/2 cup lite unsweetened almond milk, 1/2 cup of either the 5-calorie cranberry blend juice or Trop 50, 1/2 a frozen banana, 2 handfuls of baby spinach, 1 Tbsp flax seed meal and 1 cup of fruit – fresh or frozen. I change up the fruit and add one of the two juices that I think goes best with it.
