What is it about being snowed in that causes such bad eating habits? Or is it just me? I’ve been doing so well on our clean-eating plan, and not feeling at all like I’m missing out on anything. However, this snowstorm has made the likes of zoodles, apples and salad sound very unappealing. Only a cheese ravioli and meatball bake was going to satisfy my cravings tonight. But I DID add broccoli. That makes it a health food, right? (wink, wink)
OK, so back on the wagon starting tomorrow.
Here’s the plan for this week:
Monday: Baked Potato Soup
Tuesday: Slow-cooked Lemon Chicken, cauliflower “rice”, salad
Wednesday: Out – dinner at the club
Thursday: Parmesan Garlic Haddock, Broccoli Rabe
Friday: Filet Mignon, Smashed Red Potatoes, Sauteed Balsamic Mushrooms, Roasted
Saturday: South African Chutney Chicken, Salad
Sunday: Thai Shrimp Soup over cauliflower “rice”
Disclaimer: The recipes that I have provided links to are for reference. I will make changes to them to make them fit my eating plan.
I’m excited about this menu (excited as only a food nerd can be). So hopefully it won’t be that hard. I’m committed! I’m motivated! I’m going to do a great job this week!
. . . right after I finish this glass of wine and bowl of icecream. 🙂
